Cheese Sauce

Yield:4

INGREDIENTS:
2 tbsp butter or margarine
1 tbsp all-purpose flour
2/3 cup vegetable stock
1 1/4 cups milk
2 3/4 oz Cheddar cheese, grated
1 tsp Dijon mustard
1 tbsp chopped fresh basil
1 egg, beaten
DIRECTIONS:
  1. Melt the butter or margarine in a pan, stir in the flour, and cook for 1 minute. Remove from the heat and stir in the stock and milk.

  2. Return to the heat and boil, stirring, for 3 minutes, or until thickened.

  3. Stir in half the cheese, mustard, and basil. Remove from heat , let cool slightly, and stir in the egg.
