Gingery Peanut Noodle with Chicken

INGREDIENTS:
1 cup water
1/2 cup peanut butter
3 tbsp rice vinegar
3 tbsp soy sauce
1 tbsp brown sugar
1 tsp fresh ginger, grated
8 oz spaghetti, cooked
1 1/2 cups shredded rotisserie chicken
1 red bell pepper, sliced
1/2 english cucumber, cut into strips
2 scallions, sliced
peanuts, chopped, to garnish
DIRECTIONS:
  1. In a blender, blend together water, peanut butter, rice vinegar, soy sauce, brown sugar, ginger.

  2. Toss with cooked spaghetti, rotisserie chicken, red bell pepper, cucumber, and scallions.

  3. Sprinkle with chopped peanuts.
