Bok Choy and Pineapple Slaw

INGREDIENTS:
4 cups baby bok choy, thinly sliced (about 1 lb)
2 cups pineapple, thinly sliced
1 cup fresh cilantro leaves
3 tbsp olive oil
1/2 tsp kosher salt
1/4 tsp black pepper
DIRECTIONS:
  1. In a medium bowl, toss baby bok choy, pineapple, fresh cilantro leaves with olive oil, kosher salt, black pepper.

  2. Let sit 15 minutes before serving.
