Fresh Corn Vinaigrette

Yield:1 1/2 cups

INGREDIENTS:
1 cup fresh corn kernels
2/3 cup olive oil
1/4 cup fresh lemon juice
1 garlic clove, minced
2 tbsp balsamic vinegar
1 tbsp Creole mustard
1 tsp fresh thyme, chopped
salt and freshly ground pepper, to taste
DIRECTIONS:
  1. Whisk together first 7 ingredients. Season with salt and freshly ground pepper to taste.
