Cheesy Ham Bake Casserole

Tips: Parmesan is useful in low-fat recipes because its intense flavor means you need to only use a small amount.
Yield:4

INGREDIENTS:
4 celery stalks
12 thin slices of lean ham
1 bunch scallions
6 oz low-fat soft cheese with garlic and herbs
6 tbsp low-fat unsweetened yogurt
4 tbsp Parmesan cheese, freshly grated
celery salt and pepper
tomato salad, to serve
crusty bread, to serve
DIRECTIONS:
  1. Wash the celery, remove the leaves, and slice the stalks into 3 equal portions.

  2. Cut any visible fat off the ham and lay the slices on a chopping board. Place a piece of celery on each piece of ham and roll up. Place 3 ham and celery rolls in each of 4 small, heatproof dishes.

  3. Trim the scallions, then finely shred both the white and green parts. Sprinkle the shredded scallions over the ham and celery rolls and season with celery salt and pepper.

  4. Mix together the soft cheese and yogurt and spoon over the ham and celery rolls.

  5. Preheat the broiler. Sprinkle each portion with 1 tbsp grated Parmesan cheese and broil for 6-7 minutes until hot and the cheese has formed a crust. If the cheese starts to brown too quickly, lower the broiler setting lightly.

  6. Serve with a tomato salad and lots of fresh crusty bread.
