Ginger Sauce


2 tbsp white wine vinegar
2 tsp superfine sugar
1 red chili, seeded and chopped
1in piece fresh ginger root, cut into thin strips
2 tbsp ginger wine
4 tbsp fresh vegetable stock
1 tsp cornstarch
  1. Place the vinegar, sugar, chili, and ginger in a pan. Bring to a boil and simmer for 5 minutes.

  2. Stir in the ginger wine. Blend the stock and cornstarch to form a paste and stir into the sauce.

  3. Heat through, stirring, until thickened.
