Tricolor Coleslaw

INGREDIENTS:
1 carrot, grated
1/2 head green cabbage, quartered, cored, and thinly sliced
1/2 head red cabbage, quartered, cored, and thinly sliced
1 small red onion, very thinly sliced
1/2 cup chopped parsley
2 tsp kosher salt
1/4 cup olive oil
2 tbsp red wine vinegar
1 tbsp celery seed
1 tbsp sugar
DIRECTIONS:
  1. In a large colander, toss together carrot, cabbage, onion, parsley, and salt. Set colander over a large bowl and let sit 30 minutes; press firmly to remove moisture.

  2. In a large bowl, whisk together oil, vinegar, celery seed, and sugar to combine, then add cabbage mixture and toss well to coat. Cover and chill at least 2 hours, then serve.
