Apple and Cinnamon Muffins

INGREDIENTS:
1 egg, beaten
1/2 cup milk
1/4 cup butter, melted
2 small eating apples, peeled, cored and finely chopped
3 tbsp caster (superfine) sugar
1 1/4 cups plain (all-purpose) flour
1 1/2 tsp baking powder
pinch salt
DIRECTIONS:
  1. Preheat the oven to 400`F. Line a large muffin tin (pan) with six paper cases.

  2. Put the egg, sugar, milk and melted butter in a large bowl, and beat with a spoon until thoroughly combined.

  3. Sift in the flour, baking powder, salt and 1/4 tsp ground cinnamon. Add the chopped apples and mix roughly. Spoon the mixture into the prepared muffin cases.

  4. To make the topping, mix the crushed cubes with the remaining cinnamon. Sprinkle over the uncooked muffins.

  5. Put the muffins in the center of the preheated oven. Bake for 30-35 minutes until well risen and golden brown on top. Transfer the muffins to a wire rack to cool. Serve them warm or at room temperature.
